Salad or risotto from whole oat grains

For the risotto

  1. While the oats are cooking, wash the vegetables, clean them and cut into small cubes. The harder the vegetables, the smaller the dice. The mushrooms quarter.

  1. Allow the oat risotto to cool.
  2. Peel the cucumber and cut in half lengthwise and spread the seeds with a teaspoon. (The core case can be used as the basis for the salad dressing).
  3. Wash and cut salad leaves.
  4. Add cucumber cubes and lettuce to the cold-rolled oat risotto.

For the salad dressing

  • Puree the cucumber seeds and season with herbs, lemon juice, olive oil, a pinch of sugar and other spices and pour over the salad.

The whole thing is a crisp salad, where you have something to chew properly, so you will be full for a long time. The body needs a good deal of time to digest the many good ingredients of the oat and as long as you are full. Oat is also very well tolerated as a whole grain (I can not tolerate other whole grain products so well) and brings the digestion gently in motion. It is a change to other side dishes or a full meal.

The total preparation time was 40 minutes. The oats take a long time to be cooked, but the time can be spent wonderfully with snipping the rest of the ingredients, which then only have to be sautéed briefly or blanched.
