Custard made by yourself: yolk not clotted

Making custard yourself is easier and cheaper than you think. I take:

1 L of milk
2 tbsp sugar
2 heaped tablespoons of cornstarch
Mark 1 vanilla pod
1 egg, separated

Bring the milk, vanilla and sugar to a boil. Remove some milk and stir in the cornstarch. When the milk boils, stir in the cornflour. Reduce heat and stir until it turns into pudding. Then remove some pudding and stir in the egg yolk. Then stir under the pudding. Beat egg yolks to snow and mix.

As far as it goes. Only today a "mishap" happened to me! I put the milk in the pot and immediately added the egg yolk! I then added, adding sugar and vanilla pod, and stirred until the milk started to boil and I had to stir in the cornstarch.

But, oh no wonder, the yolk had not coagulated!
