Even if the weather still fools us in the summer, it is the right time for cooking / canning. I harvested pears and used them to make an oriental-style chutney, which goes well with game dishes, cheese platter, pure on fresh farmhouse bread, or even to flavor sauces.

ingredients

  • about 1 kg of pears
  • 1 sour apple
  • 5-6 dried dates
  • 1/4 L apple juice
  • 100 ml of herbal vinegar
  • 1 star anise
  • 1 cinnamon stick
  • 1 red chili pepper
  • 1 piece of ginger (thumb size)
  • 1 red onion
  • 3-4 cloves or 1 Msp. Clove powder
  • 2 tablespoons raisins
  • 4-5 tbsp brown sugar

preparation

  1. The pears and the apple are thoroughly washed, gutted and cut into small cubes.
  2. Peel onion, dice.
  3. The dates hack.
  4. Heat vinegar and apple juice with spices and ginger in a saucepan. Dissolve brown sugar in it.
  5. Add pears, apple, ginger, dates, chilli and raisins.
  6. Approximately Cook for 5 minutes under supervision (stir).

Hot fill in previously sterilized jars, wipe the edges well, close immediately and turn upside down.

If you want a bit more strength, you may still be able to work with gelling sugar according to the packing instructions.

Nicely decorated, the pear chutney is also suitable as an autumnal greeting from the kitchen.
