Red wine sauce

Hello everyone, here is a red wine sauce recipe that I "stole" from an Australian cooking show.

ingredients

  • 500 ml of red wine
  • 100 ml port
  • 1 bay leaf
  • 3 peeled crushed garlic cloves
  • 3 small thyme branches
  • 2 peppercorns

preparation

  1. Bring everything to a boil and reduce until 100 ml are left.
  2. Then add 400 ml of veal stock (according to recipe, I took cattle stock) and let it simmer for about 10 minutes.
  3. If this is too fluid, stir in a cold piece of butter (tip: always have small pieces of butter in the freezer ready!) Or use sauce binder.
  4. Take a fine sieve and then spread with cheesecloth or 2 layers of kitchen paper and add the sauce. This makes it very very fine and that looks better on the plate!

Recommendation:

In addition beef fillet steak, garlic-potato puree, caramelized carrots and a good wine!
