Strawberry custard frosting for muffins

This strawberry custard frosting tastes super delicious and is very easy to replicate. Due to the fruity note, it fits almost all muffins.
Ingredients are enough for 20 muffins
- 200 g fresh or frozen strawberries
- 2 tbsp sugar
- 175 g soft butter
- 175 g double cream cheese
- 50 g of sugar
- 1 pck. Custard powder
- 200 ml of milk
- maybe some red food coloring
preparation
- Put the washed strawberries in 150 ml of milk and chop with a blender until no more pieces are visible. Boil the strawberry milk over low heat.
- Mix the remaining 50 ml of milk with two tablespoons of sugar and the custard powder and pour into the boiling strawberry milk.
- Allow the pudding to cool to room temperature.
- Beat the cream cheese with the soft butter and 50 g of sugar until frothy and gradually stir in the cooling custard.
- If you like the color a bit more intense, you can add some red mid-life color.
- The frosting can now be in the refrigerator until it becomes firmer.
- Then pour into a piping bag and decorate the muffins as you like. I like to use the M1 and M2 jets from Wilton. But it works with every other star grommet.
