Tagliatelle with wine sauce and crumbs
This was one of our family dinners that conjured my great-grandma on the table.
Ingredients noodles: - who makes them is of course the master :-)
tagliatelle
water
salt
Ingredients wine foam sauce:
100g sugar
5 eggs
1 / 2l white wine
Ingredients Crumbs:
butter
breadcrumbs
Preparation of noodles:
As usual in salted al dente cooking
Preparation of wine foam sauce:
White wine, sugar a whole egg and much egg yolk in a saucepan
Whisk at medium heat until the sauce boils (rises in the pot)
Immediately remove from heat and let cool slightly
Egg whites (four more) beat stiff
Lift the egg whites under the sauce
Preparation crumbs:
Heat butter in a pan until lightly browned
Turn down the temperature slightly
Add breadcrumbs to the butter and roast with constant stirring until it has a dark brown color (do not burn - go fast)
Arrange tagliatelle with wine sauce and crumbs.
For the children, there are applesauce with the noodles and crumbs instead of the wine foam sauce.
