Baked zucchini with crust

Baked zucchini with crust

ingredients

  • 6 zucchini (as small as possible, they are better)
  • 1 clove of garlic
  • 4-5 tablespoons olive oil
  • Salt pepper
  • 6 tbsp breadcrumbs
  • 1 bunch of chopped parsley
  • some chopped fresh thyme and rosemary (not too much, dominates)
  • Grated roughly 30 g of parmesan cheese

preparation

  1. Wash the zucchini, halve lengthwise, place on a baking tray with baking paper. Pierce the halves (cut side up) more often with a fork.
  2. Peel garlic, squeeze and mix with the oil. Brush the courgettes halves with the garlic oil with a brush and add some salt and pepper.
  3. Preheat the oven to 200 degrees and bake the zucchini halves for about 12 minutes.
  4. In the meantime mix the remaining oil well with the herbs, breadcrumbs, parmesan and parsley, salt and pepper. After the 12 minutes baking time, spread the mixture over the zucchini and bake for approx. 14 minutes (longer or shorter depending on the desired bite strength).

Super side dish with meat dishes that should be a bit Mediterranean. Also suitable as a main dish with a bowl of salad, who likes it vegetarian.
