Labskaus is a typical sailor recipe: It should be prepared in a pot, it had to supply enough nutrients and the sailor had to see what's inside. Secondary condition: there was no fresh beef available.
Ingredients for 4 persons)
- 1 vegetable onion
- 1 tbsp frying fat (oil, margarine or vegetable fat)
- 400 - 500 g cured beef (breast)
- 800 g of potatoes
- 2 - 3 bay leaves
- 5 - 8 grains of allspice
- 1 tsp of mustard seeds (can, does not have to)
preparation
- Peel potatoes, cut into small pieces, place in water. Cut the pork meat into small pieces.
- Fry the onion in a saucepan, sauté with about ½ liter of water, add the meat and spices and simmer for about 2 hours.
- Then remove the spices, season the broth (too much salt, if necessary dilute) and add the potatoes.
- Boil and pour the broth into a jar, then mix the meat and potatoes with the pounder to a pulp. (Do not purée!) If the porridge is too dry, add from the broth.
