Oatmeal bear paws

Recipe: Oatmeal Bear Claws. A very crispy pastry!

Ingredients: (for 35-40 pieces)
100 g wholesome oatmeal, 100 g icing sugar, 100 g dark chocolate, 200 g ground almonds or hazelnuts, 1 tbsp cocoa powder, 1 pinch of cinnamon, 4 egg whites, 1 pinch of salt, almond sticks for decoration

Preparation:


Preheat the oven to 150 ° C.

Mix the oatmeal with 2 tablespoons powdered sugar, lightly fry in a pan and allow to cool.

Grate the chocolate roughly and mix with the cooled oatmeal.


Beat the egg whites with a pinch of salt until stiff, stir in the remaining powdered sugar and beat until the mass is so stiff that a knife cut remains visible.

Mix the chocolate-oatmeal mixture with the ground almonds or nuts, cocoa powder and cinnamon and bring them under the egg whites.

Form balls out of the dough with wet hands, squeeze them slightly, place them on a tray lined with baking paper and decorate with almond sticks.

Baking time: Allow circulating air to circulate on the middle rail for about 20 minutes at 150 ° C, then allow to cool on a wire rack.
