Chop meat or fish

Anyone who has wondered what chiselling means, I did not know it yet, read it yesterday at a recipe.

So it means to cut the meat or fish fillet at the edges several times obliquely. This is really a great tip, which I tried today at the Wienerschnitzeln and that worked really well.

Otherwise, usually the meat raises something in the pan while frying, but thanks to the cutting, the meat (my schnitzel) is really flat in the pan and can be roasted so great.
