Cocktail sauce or dressing: without alcohol

Cocktail sauce is usually one of the side dishes / dressings in which a small amount of alcohol is hidden. If you do not want to, you can try the following alternative without alcohol.

  • 1 egg yolk
  • 1/2 tsp mustard
  • 150 ml of germ oil
  • 2 tablespoons tomato paste
  • 80-100 ml of orange juice
  • 1-2 teaspoons lemon juice
  • 1 tsp sugar
  • 1 pinch of salt
  • maybe 1 splash Tabasco

Let's start with the preparation of the basic mayonnaise:

Mix the fresh egg yolk with the mustard and slowly whip up the oil with a few drops. Then in small quantities, with further stirring, slowly top up the total amount of oil. Mix the tomato paste with 50 ml of O-juice, lemon, sugar and salt and add this mixture to the mayonnaise. Then add the remaining juice until the desired consistency is achieved. If you want a slightly thinner dressing you can increase the juice content.


The ingredients are not all in stock? Think of the alternatives. Tomato paste can be replaced with ketchup, but then omit the sugar and dosed salt sparingly. Mayonnaise - replacement of finished product possible.

This sauce can be served with chicken salad, fish, crab or fondue. This dressing variety for all colorful and fruity salads.

Stable in the fridge for a few days.
