Colorful kohlrabi carrots soup with cabanossi

This colorful cabbage & carrot soup with Cabanossi is made quite fast and tastes delicious! If you want, you can also prepare it well without cabanossi, meatballs or sausages.

ingredients

For 3-4 servings

  • 2 kohlrabi
  • 400 g of potatoes
  • 300 g of carrots
  • 1 red onion
  • 1.5 L vegetable stock
  • 2 tablespoons of butter lard
  • 2 tablespoons flour
  • 200 g sour cream
  • Pepper, salt, caraway
  • some nutmeg, some sugar
  • Parsley and / or chives (fresh or frozen)
  • 200 g Cabanossi (also meatballs or sausages if you like)

preparation

  1. The potatoes, kohlrabi and carrots are peeled, the potatoes in small cubes, the kohlrabi in pens and the carrots sliced.
  2. Boil the vegetable broth and cook the potato cubes for about 10 minutes, then add the kohlrabi sticks and carrot slices and cook for 10 minutes.
  3. Meanwhile, the onion is peeled and finely diced. In a pan, melted butter, the onion cubes in glassy steamed, dusted with the flour and stirring a roux is prepared.
  4. After the cooking time of the vegetables, stir in the roux slowly into the soup, then let it boil and simmer a little more.
  5. Now the sour cream is stirred in, the whole with pepper, salt, sugar and nutmeg and tasted the Cabanossi in slices (or meatballs or sausages if desired), then let it again for about 5 minutes on a low temperature.
  6. Then the soup with the chopped herbs is served.
