Colorful potato salad

Recipe for a low calorie, vegetarian colorful potato salad.

ingredients

  • Hard-boiled potatoes
  • paprika
  • Apple
  • yogurt
  • Majo
  • onion
  • garlic
  • gherkins

preparation

Cook boiled potatoes, peel and slice.

Add the grated onion and garlic.


Cover with hot and strong vegetable broth.

Important: The potatoes should not "swim" in the vegetable broth - so add very little broth, depending on the amount of potatoes. Only as much as the potatoes absorb.

Cover and let cool (best over night).


Cut the red, yellow and green peppers into strips and mix them together, dice the cucumbers and mix in, peel the apple, cut into quarters and cut into slices, also mix in.

At the end add yoghurt and mayonnaise (mayonnaise) half and half. Vegans can also omit the Majo.

I do not give any quantities, and everyone can vary them to taste. Well, the salad is best when the Knofi and onions are fed.
