Fruity chocolate cherry cheesecake

Last week I once again baked this wonderfully fruity-tasty chocolate and cherry cheesecake as a Sunday cake and would like to recommend this great recipe to you. It is not difficult and the cake is always very good!

ingredients

For my spring form with 28 cm diameter I take:


For the dough

  • 400 g of wheat flour
  • 200 g soft Sanella or butter
  • 200 g of sugar
  • 40 g of cocoa
  • 2 eggs
  • 1 pck of baking soda
  • 1 pinch of salt

For the filling

  • 250 g butter
  • 250 g of sugar
  • 500 g of low-fat quark
  • 1 cup of sour cream (200 g)
  • 1 pinch of salt
  • 3 eggs
  • 1 pck of vanilla sugar
  • 1 pck. Vanilla pudding
  • 1-2 glasses of sour cherries (best 2!)
  • In addition, powdered sugar for dusting

preparation

The preparation is very easy


  1. First, drain the cherries well and preheat the oven to 180 degrees top / bottom heat or 160 degrees air circulation.
  2. All ingredients for the dough are placed in a large mixing bowl and kneaded with the dough hook of the hand mixer to a crumbly dough. Then you take out the dough and knead it well with your hands again, so that it becomes supple.
  3. Half of the dough is placed as a base evenly in the greased or with baking paper designed Springform and lightly pressed, then spread the drained cherries.
  4. The butter for the filling is left to melt in a pot, then placed in a second bowl and allowed to cool slightly before being stirred well with the quark and sour cream. Then gradually add eggs, sugar, vanilla sugar, salt and custard powder and stir well.
  5. Finally, just distribute the quark mass evenly over the cherries and finely crumble the remaining chocolate dough over the cake. finished!
  6. Now off in the preheated oven for about 1 hour.

Another tip: So that the surface of the cake is not too dark, I put towards the end of the baking time a foil or baking paper on the surface.

After baking, I let the cake cool in the mold and in the oven, so it can then easily be released from the mold!

Before enjoying it is then dusted with powdered sugar.
