Lemon butter

Lemon butter, great with fresh bread as a side dish for a barbecue or as a party souvenir.

ingredients

  • 1 pck of butter (I like to use the original Irish butter, as this can also be spread straight out of the fridge)
  • the abraded peels of 2 biocrites (unsprayed)
  • 1 tsp fleur de sel (alternatively sea salt)
  • 1 handful of basil leaves

Equipment:

  • Mixing bowl
  • whisk
  • mortar
  • scissors
  • Grater or pest scraper

preparation

  1. For the sake of simplicity, cut the butter into smaller pieces and let it warm.
  2. In the meantime, thinly grate the lemon peel with a grater or scrape (if too much white is removed, it can become bitter).
  3. Cut the basil leaves into small strips with scissors.
  4. Finely pulverize the salt in the mortar.
  5. Then mix everything together in a mixing bowl.
  6. Fill in serving bowls and put in the fridge.

Tips:

The remaining lemons can be squeezed out for cheesecake or lemonade.


The butter is easy to store and tastes even better after being pulled through.

Have fun trying it out, it's a refreshing alternative to the usual garlic or herb butter.
