Recipe for a small mini cake

Do you know that? You have such a nice cupcake shape in heart shape and just want to bake this one small cake?

As a souvenir for the colleague in the workplace, for the beloved for your birthday or Valentine's Day, for (mother-in-law) Mother's Day, for your own child, because it has allergies and is invited for a birthday, where there is no cake may or because you do not have that many ingredients at home.


How do you calculate the required amount of ingredients?

How much an egg weighs is written on the package. There are four weight classes: XL Very large over 73 g, L Large 63 - 73 g, Medium M 53 - 63 g, Small S under 53 g.

In the tablespoon format

  • 1 egg size L
  • 3 heaped tablespoons of sugar (possibly partly vanilla sugar)
  • 3 tbsp oil (sunflower or rapeseed)
  • 3 heavy EL flour (possibly some cornstarch)
  • 1 pinch of salt
  • 1 pinch of baking soda (works without)

In eggcup format

  • (My egg cup holds almost 40 ml, shot glasses often have a calibration mark at 20 ml)
  • 2 egg cups of sugar
  • 3 egg cups of flour
  • 1.5 egg cup oil
  • 1 pinch of salt
  • 1 pinch of baking soda (works without)

preparation

This amount gives about 200 ml of dough. The baking pan should only be filled to 3/4, because the dough still rises. So best measure with water before baking, how much goes into the baking pan.

  1. Stir egg until foamy
  2. Add sugar and pinch of salt to the mixture until well frothy
  3. Mix the oil well with the foam
  4. Mix flour with baking powder and sift over it
  5. Mix well again
  6. Grease the baking tin with butter and sprinkle with breadcrumbs, coconut flakes, ground almonds or whatever flavorful crumbs, so that the cake dissolves well from the mold.
  7. Pour dough into the mold and bake in a preheated oven at 180 degrees for about 20 minutes.
  8. Garprobe: If you use a toothpick to peek in, no liquid dough may stick to it.

How do you make a mini cake without an egg?

This is also possible, instead of taking the egg in the above recipe.

  • 1.5 egg cup water (as much water as an egg weighs, see above)
  • 0.5 t of binding agent (for example guar gum, soya flour, locust bean gum, if necessary also without binder)
  • Do not replace flour with cornstarch
  • Use 0.5 tsp. Baking powder

The egg serves as a binder in the dough and brings through the frothy air into it, the latter is achieved by more baking powder.

The basic dough can of course be refined by other ingredients such as fruits or cocoa.

The finished cake can be decorated with powdered sugar, chocolate, frosting or jam layer etc.
