Hefezopf I, sweet

I baked this variation for my debut - and it inspired my colleagues. Some even wanted the recipe. Since the braid arrived so well in the social station, I also share it with you.

ingredients Dough:

  • 500 g of flour (I take sweet wheat flour)
  • 1 packet of dry yeast (or the equivalent amount of fresh yeast, but with dry is easier)
  • 1/4 L of water (lukewarm is ideal)
  • 50 g vegetable oil
  • 1 pinch of salt
  • 1 pinch of sugar

For the "filling" 1 hand full of raisins and chocolate drops (the ones that do not melt when heated)


For the casting: about 3 - 4 tablespoons powdered sugar & orange juice

First of all, you prepare a dough from the dough ingredients by actually placing all the ingredients in a mixing bowl (it is best to first mix the dry ingredients before oil and water are added) and then work them with the dough hook.

When a lump of dough has formed, that is, the liquid ingredients have been bound, you dump everything on a floured work surface and knead the dough until all the crumbs and flour remnants have been bound and you have a nice, smooth, tough dough lump. He comes back into the bowl and is covered with a damp cloth. The whole thing should now rest in a warm place for about 1 hour (alternatively set the oven to about 30 ° C and let the dough go there).



When the dough has risen (to about twice the size, but of course not exactly double), it comes back to the floured work surface, where you knead it well again. Then you divide the amount into three equal parts. In one lump you knead the raisins, in another the chocolate drops. The third remains (at least for me) pure. From the three lumps pulls / rolls / forms elongated strands, which you braid to plait.


The braid is now on a baking tray at about 180 ° C in the tube. With my oven, about 20 minutes are enough baking time. Naturally, orientation is provided by a ping-pong with the wooden skewer or the "knocking test" (If it sounds hollow, it's through).

When the braid is finished, let it cool down for a moment. Then, using powdered sugar and orange juice, she stirs a thin frosting, with which you paint the braid neatly. Dry and let cool down and then enjoy!
