Simple lemon cake - super delicious

Here is a very simple and quick recipe for a lemon cake, which has recently become our favorite lemon cake:
ingredients
- 200 g of sugar
- 1 pck of vanilla sugar
- 250 g of butter, room temperature
- 3 tablespoons lemon juice
- 1 vial of lemon flavor
- 4 eggs
- pinch of salt
- 400 g of flour
- 1 pck of baking soda
- 125 ml of milk
- Powdered sugar for dusting or powdered sugar with 3 tablespoons of lemon juice and 2 tablespoons of water mixed for the casting
preparation
- Preheat oven to 180 ° top / bottom heat.
- Beat butter in a large bowl with sugar, vanilla sugar and the pinch of salt until creamy.
- Then stir in the 4 eggs one after the other, continue beating. Add lemon juice and flavor.
- In another bowl mix flour and baking powder and sift, then mix this with the milk to the butter mixture and mix everything well. That's almost it.
- Now only gugelhupfform (cup cake form goes well) with butter, in addition to sprinkle with breadcrumbs, so that the cake can be solved in any case well out of shape.
- Fill in the dough and then put it into the oven, rather in the lower third, as the cake also "goes up" a bit. Then bake at 180 ° for about 50 minutes.
- Remove the finished cake from the oven and let cool slightly, then the cake dissolves by itself from the mold.
- You can now simply sprinkle it with powdered sugar or cover it with a icing sugar to intensify the lemon flavor.
- The font can be poured over it, so it runs down like tears on the cake. I also did it first, maybe it looks a bit nicer, but we love a lot of this lemony frosting, so I made the whole cake thick with it.
The result is a super-loose, fantastically fluffy cake that tastes really delicious.
1 week later I prepared it as a tangerine cake, but added 1 vial of butter-vanilla flavor, 2 jars of mandarins, instead of 125 ml milk I took half milk / half tangerine juice from the tin, but at the end I finished the cake dusted with powdered sugar. Also extremely delicious!
