I have often (more or less successfully) tried to make mayonnaise myself. There were tips with only fresh, but then only with "older" eggs ... For other advice you should use only room-warm oil and eggs ... Well, sometimes it worked and sometimes not.

Now I have found an ultimate recipe, and have long been used successfully, which I do not want to withhold from you. In my search in the subject area, I have not discovered a similar recipe. If there is already an identical recipe, then good - I do not want to earn any points - for tips.

ingredients

  • 2 egg yolks
  • 1/4 l rapeseed oil (or another neutral oil)
  • 1 tbsp mustard
  • 1 tall jar (I do not know why, but then the mayonnaise will work for sure) is this a physical process?
  • 1 hand mixer (some do not have a hand blender?)

preparation

  1. Put 2 egg yolks in the high container and add 1 scantful of mustard. Mix with the hand mixer until the mixture becomes creamy.
  2. Add a good dash of oil and continue to mix - after a short time, the mass becomes solid. Again and again, while mixing, add oil (not drop by drop, as Mama preached) but generously. You will see that the masses are getting stiffer.
  3. You can then taste the finished mayonnaise with salt, lemon juice, some mustard (pepper) or, as I did, with some sour cream.

I would be happy, if this mayonnaise, as with me, succeeds. Anyway, this vieeeel is better than those from the tube and no witchcraft!

During the summer I prepared a kind of base sauce from this mayonnaise (mixed with sour cream) and then mixed with anchovies, curry, pineapple pieces and used for salad dressings (especially for pasta salads).
