Salmon rillettes

Rillettes of two salmon sounds elegant, but is just another name, for a delicious firm cream (spread), fresh salmon and smoked salmon.

  2. After boil, the salmon dries for about 25 minutes, even on low heat. He is now cooling off in the broth.
  3. The cream is beaten.
  4. Now we need a blender or food processor.
  5. The smoked salmon in pieces, the cooled fresh salmon, the soft butter, sherry, as well as the whipped cream and the spices, are now mixed to a solid cream.
  6. Tasting, if there may be some salt left. Maybe even a drop of lemon juice.
  7. The cream with the distinguished name Rillettes, is now a bowl filled and smoothed. You can still garnish with lemon quarters and / or dill.
  8. In the refrigerator, it will solidify in a few hours.
  9. Delicious with crackers or slices of toast. Also good in hardboiled eggs, for a fifties feeling! Together maybe with cheese hedgehog and toast Hawaii!
