Cheesecake does not coincide with the cake - even if stated differently in the recipe! - bakes only at about 140 ° C.

After about half of the baking time (which is of course extended by the lower temperature), for example, with my cheesecake recipe, that would be about 35 minutes, open the oven, take out cake and let it cool for 20 minutes - which is NOT a typing error that really lasts that long ,

Then put the cake back in the oven and bake. The cheesecake must hardly rise during the entire baking process. If he does, lower the temperature even further.

If you want to paint a yolk of egg yolks on top of the cake as a "top layer", you should do that only in the "cooling down phase", the cake will not be so dark and the egg yolk will spread much easier.
