Meatballs with vegetables

Would you like to introduce my vegetable meatball recipe?

1kg mixed minced meat
2 large onions chopped
2 eggs
2 stale rolls soaked in about 250 ml of warm water and well expressed.

Mix these ingredients together and season with oregano, paprika, salt and curry. With this amount of meat, I've always had a spice jar full of oregano, paprika, and curry, the kind you buy at the grocery store.


And then:
Roughly shred 4 large carrots
1 thick red pepper also coarsely crushed
1 can of corn dripped off
1 can of peas

Throw these 4 types of vegetables into the food processor and chop them into a more or less coarse pulp. (I always put carrots and peppers together and the corn and peas, since my food processor does not have that much capacity.)

Then mix this vegetable porridge with the minced meat porridge, knead well, make into meatballs and fry. Gave 25 meatballs, for a party or even for freezing.

The advantage of chopping vegetables is that you can store a lot of vegetables in the meat (for the sake of vitamins) and the meatballs will not fall apart because the pieces of vegetables may be too big.
