This type of potato salad was inspired decades ago by a national association of potato growers. Is also - almost - everything from the earth!
ingredients
- 500 g of hard-boiling potatoes
- 150 g Rapunzel (1 pck)
- 6-8 radishes (depending on size)
- 1 medium red onion
- 2 tbsp chives
- 1 pinch of sugar
- 2 tablespoons wine vinegar
- 2 tbsp olive oil
- 200 ml vegetable broth
- ½ tsp salt
- colorful pepper
preparation
- Wash Rapunzel (lamb's lettuce), clean and drain. Wash radish and slice.
- Peel the onion and cut into small cubes.
- Cook the potatoes, peel, dice (the potatoes!) And keep warm.
- Prepare the marinade in a small saucepan as follows: make vegetable broth (eg vegetable broth) with 200 ml of water, vinegar, salt and a little sugar, bring to the boil and add the ground pepper and the diced onion.
- Bring the marinade to a boil and pour over the warm potato cubes.
- You can let it run through covered for a few minutes.
- Then sprinkle with chives, sliced radishes and Rapunzel underneath and serve, for. B. with wieners.
