Turkey breast from the pressure cooker

ingredients

  • 3-4 turkey breasts
  • salt and pepper
  • Butter lard or oil for searing
  • 1 onion
  • 3 carrots
  • Tomatoes (or marrow)
  • and water or poultry broth for pouring
  • Cream to refine

preparation

  1. Wash turkey breasts, dry and season with salt and pepper. Fry in the open pot with clarified butter or oil, until the desired tan, then remove and put aside.
  2. Frying a halved onion, carrots, fresh or dried tomatoes (or a spoonful of marrow) in the frying fat will give a wonderful sauce!
  3. Add turkey breasts again and pour water or stock. Close pot as required and set cooking level 2. The pot "indicates" when the cooking process starts properly, then cook for about 13 minutes. Please do not open immediately!
  4. Take from the hot plate, let it cool a little (5 minutes were enough for me) and then you can let it evaporate and open. After opening, I puree the vegetables in the sauce and thus save flour or sauce binder.
  5. Taste and refine with cream.

The cooking time of 13 minutes is unbeatable. I especially like the stainless steel version of the pot, which also makes it possible to sear it! I did not like it, the constant drop from the pot handle, so not only was my stove always wet, the cooking liquid was less and less.
