Baked sheep's cheese with honey on caramelized leeks

This vegetarian dish tastes really delicious. Even though I left the sheep's cheese in the oven a bit too long and it did not make it so sliced on the plate, as I had imagined, I still want to share the recipe plus pictures.
To the oven-baked sheep's cheese with honey on caramelized leeks fits very well a crisp fresh baguette or even pel- or baked potatoes.
But it is also very good as a food court.
Ingredients for 1-2 persons:
For the baked sheep's cheese:
- 100 g feta cheese / goat's cheese
- 2 cloves of garlic
- 1 red pointed pepper (or any other pepper)
- 1 sprig of rosemary
- 1-2 sprigs of thyme
- 1 tsp honey
- 2 teaspoons olive oil
- 1 pinch of cayenne pepper (or more)
- some pepper from the mill
For the caramelized leek:
- about 1 large leek (or more)
- 1 handful of cocktail tomatoes
- 1-2 teaspoons honey, olive oil
- some chopped walnuts to taste, I still had caramelized from Christmas (to garnish at the end)
