Crunchy zucchini rösti with grated cheese

I had already set a similar recipe some time ago, but with this one I changed the ingredients a bit. These zucchini rösti taste even better, probably due to the hard cheese or oatmeal. They are very crispy and also taste cold the next day.
Ingredients (for 3 servings)
- 3-4 small zucchini (about 250 g)
- 1 onion
- 2 eggs
- 60 g of grated hard cheese (Manchego, Parmesan or Pecorino)
- 80 g of pungent oatmeal
- 1 tablespoon chopped parsley (fresh or frozen)
- Pepper, salt, caraway, chilli powder
- Rapeseed oil for frying
preparation
- The zucchini are washed and roughly grated. Through a cloth or sieve then the resulting liquid is expressed.
- The onion is peeled and finely diced.
- Then the zucchini and onion cubes are mixed with the eggs, the grated hard cheese, the oatmeal and the parsley and seasoned vigorously with pepper, salt, cumin and chilli powder.
- In a coated pan, a little oil is heated. Then add one heaped tablespoon of zucchini paste to the pan, sauté them a bit flat and fry the rösti on each side for 2-3 minutes until crisp and brown.
Then a fresh salad and / or herbal quark, cream cheese or just a little crème fraîche is served.
