Dumplings with bacon cream sauce and sauerkraut

ingredients

  • 750 g Thuringian dumpling dough, half raw, half cooked
  • Diced 100g of dried meat, this is smoked lean, streaky bacon
  • 1 tbsp margarine or oil
  • 1 heaped el flour
  • 200 ml of fresh milk
  • 200 ml of cream
  • some grated nutmeg
  • Salt, pepper, spice, some Maggi
  • chopped parsley

preparation

  1. Fresh sauerkraut with bay leaf, pepper, clove, juniper berries, 1 grated potato to tie, vegetable or meat broth, or each to his liking.
  2. The dumplings are boiled in salted water and in the meantime, the diced bacon is left in margarine until it is well browned and then the flour is added and is also browned with stirring. Now the milk is extinguished and boiled up. If it is too stiff, add some of the cooking water to the dumplings, but then the cream is added.
  3. Now season, as described above, bring to a boil while stirring. Serve the sauerkraut with the dumplings and the sauce for everyone, sprinkle with the parsley, for several also a plate looks good.
