Tart with green asparagus

I like this french tarte asperges verte? - Tarte with green asparagus - recipe very much. Is a bit expensive to produce, but by the Gruyere / Greierzer and the Bündner meat spicy and super delicious!
ingredients
- 150 g sieved flour
- 1 pinch of salt
- 80 g butter, very cold, diced
- 1 egg yolk
- a little ice-cold water
- 400 g green asparagus
- 100 g Gruyere / Greierezer, of which 75 g diced, 25 g grated
- 2 shallots, finely diced
- some white wine (Chasselas)
- 2 eggs
- 100 ml of milk
- 80g Cream Double or Creme Fraiche
- chopped parsley
- pepper
- for blind baking: a pack of legumes
- a bit of diced Bündnerfleisch
preparation
- Knead sifted flour with salt and the cubed, ice cold butter, as well as an egg yolk and a little ice-cold water by hand. Just enough ice water to make a soft dough! Wrap in cling film and place in the refrigerator for 30 minutes.
- Roll out the dough, preferably between two layers of cling film, then line the tart tin and put it back in the fridge for 30 minutes.
- Then pierce the bottom of the dough with a fork several times, using the dried legumes, bake for 15 minutes at 200 degrees.
- Cut the asparagus into pieces of about 2 cm, put the tips aside, blanch for 5 minutes in salted water, then add the asparagus tips for another 2 minutes. Shake with ice water.
- Steam the shallots, add the Bündnerfleisch with a dash of Chasselas and then add them together with the asparagus and the diced Gruyere in the Quicheform.
- Mix eggs, milk, cream double / fraiche and parsley, season with salt and pepper and pour over the asparagus. Then sprinkle the grated Gruyere.
- Bake at 180 degrees for about 25 - 30 minutes.
Enjoy with a glass of Chassela! By the way, the tart tastes cold better than warm, but that's a matter of taste.
