Sweet and sour potato soup

ingredients

  • 400g potatoes
  • 70g hard sausage
  • 70g fat bacon
  • 2-3 eggs
  • sugar
  • vinegar
  • 200g red spur

preparation

Dice potatoes and cook with a large pinch of salt. After cooking, remove from the heat and stomp, then season with sugar and vinegar. Dice the bacon and sauté until it is brown and add to the soup.

Dice the hard sausage (only sauté briefly) and also add to the soup. Cut the onions very finely and fry them brown and add. Stir everything and bring to a boil again.

When the soup is boiling, it is best to leave it off and leave for 1 hour. Let it boil and then add the two eggs to the soup, do not mix immediately, stir slowly after a few seconds to allow the egg to flocculate and make the soup as thick as you want it to be! ATTENTION: the egg removes vinegar and sugar taste, so season!

Slice the red sausage and place it on the plate. Then add the soup and eat delicious. Of course, only one or two slices.
