Flädlesuppe - pancake soup


  • 125 g of flour
  • 1/4 l of milk
  • 1 egg
  • about 1 pinch of salt
  • about 1 L broth


  1. Mix half of the milk with flour, egg and salt until the dough is thick and smooth. Then dilute it slowly with the remaining milk.
  2. Then bake the Flädle (gossamer) like pancakes.
  3. Cut the slices into narrow strips (not too long), pour over the boiling broth and let it simmer for about 5 minutes.
  4. Finally, add some freshly chopped chives.
