Tomato soup - just delicious

Delicious tomato soup


For about 2 people

  • 500 g of aromatics
  • 1 onion
  • 2 toes of garlic
  • 500 ml of vegetable stock
  • 2 tablespoons tomato paste
  • 1 good shot of soy cuisine / cream
  • basil
  • thyme
  • parsley
  • Oregano*
  • pepper
  • salt
  • oil
  • Blender or large sieve
  • optional: flaxseed, 1 bag of rice

* You can take it fresh, but just as well dried


Cut the onion and garlic into small cubes and sauté in the oil. In the meantime, cut the tomatoes and remove the stalk.

Add the tomatoes to the fried onions and garlic and season with all the above spices, salt and pepper.

Put the cooker down and simmer for 15 minutes.

After the quarter of an hour, top up with the vegetable broth and add the tomato paste and simmer for another 5 minutes. Then you can either puree the whole thing and if you want to pass without a tomato peel through a large sieve.

Season with soy cuisine and maybe season with spices. This fits fresh baguette.

I still cook a bag of rice separately as a soup dish.

When I serve the soup, I often add flaxseed, which are not only healthy, but also provide a crispy, nutty side dish to the soup.

This dish is super fast, healthy and not stressful at all.

Ps: We are very good eaters, so this amount may be enough for 3 people.
