Fruit cake with apple, dates and nuts

This is a simple recipe for a very juicy and fluffy cake that can be cooked and baked very quickly and easily!
ingredients
- 1 to 2 apples
- a few drops of lemon juice
- 80 g each of dates and apricots (dried)
- 100 g walnuts (chopped)
- 80 g of raisins and / or cranberries
- something rum
- 200 g of brown raw cane sugar
- 200 g room warm butter
- 1 pinch of salt
- 4 eggs
- 250 g of dark wheat flour (type 1050) or spelled flour
- 2 teaspoons of soda (or baking soda)
preparation
- The raisins / cranberries are softened (preferably overnight) in the rum.
- The oven is preheated to 180 degrees top and bottom heat.
- The apples are washed, grated (with the shell) and drizzled with a little lemon juice.
- Dates, apricots and walnuts are cut or chopped into small pieces and mixed with the apple mass.
- In a mixing bowl, the sugar is stirred with the soft butter and a pinch of salt until creamy, then the eggs are stirred successively.
- The flour is mixed with the soda / baking powder and gradually stirred under the sugar-butter mass.
- Finally, the apple mix is then lifted.
- Spread the dough evenly on the baking sheet lined with baking paper.
The baking time is about 30 - 35 minutes in the preheated oven.
The cooled cake can be sprinkled with powdered sugar or covered with sugar or chocolate icing, or served with some whipped cream! ;-)
