Juniper sauce with wild boar and venison

Juniper berries have a long tradition as a spice for game dishes - and also taste in high-percentage drinks. Juniper berries grow on a softwood shrub that can grow up to 800 years old.

The berries are first green, then purple-black, then they are ripe. They are good for digestion, there are also many schnapps that are made from it.

In the fairy tale, the juniper tree was referred to as supernatural powers; it was called the almond tree.


And here is the recipe for the juniper sauce to game:

Ingredients:

  • Juice and grated peel of a bio orange.
  • 1 glass of red wine
  • 2 tablespoons wine vinegar
  • 1 onion in pieces
  • 1 tsp sugar
  • 1 tablespoon of crushed juniper berries
  • 1 tsp salt, 1/2 tsp pepper

And so it goes:


  1. Mix all ingredients in a pot and simmer for 10 minutes.
  2. Then pass through a sieve, put back in the pot and with flour butter.

How to make flour butter:

  • 1 tablespoon of flour is kneaded with 1 tablespoon of butter.

Stir in the boiling sauce and cook for a few minutes.

Very tasty with wild boar roast, venison or rabbit fillets.
