Mahonien jelly

Mahonias are these pretty little shrubs that grow in gardens or parks and produce beautiful clumps of yellow flowers in spring and thick clusters of small blue berries in summer.

From the boiled juice of these berries you can make a fantastic jelly. The boiled juice is also still healthy, but quite tart.

For jelly, first boil the fruit with a little water and then sweep the porridge through a sieve or let it drip overnight in a cloth. Then boil 1 liter of juice with a packet of gelling sugar. It is best to add some sugar in addition, because the juice is rather tart. Boil for 4 minutes bubbly and fill in hot rinsed jam jars. Done is a wonderful jelly, not too sweet, which you can give away as well, because not everyone knows.


Alternatively, you can take less juice and fill up with naturally cloudy apple juice or cherry juice or the like.

You can also do it well over desserts or in yogurt / quark dishes, also to vanilla ice cream it tastes good. First of all, if the jelly should become too liquid, it can be used excellently for such purposes.

And if you consider that you get the berries for free and a packet of gelatin sugar at the discount store or in the supermarket currently costs 59 to 79 cents, you have a cheap spread.

Please note: Raw are the berries poisonous, the bitten kernels as well, but the cooked juice is perfectly fine. I've recommended this recipe from a housekeeper who has cooked it x times.
