Make lemonade yourself - basic recipes

Lemonade is delicious? and usually squeaky sweet. Unfortunately not good for figure, teeth and conscience. And it's easy to determine the taste and sugar content of your lemonade yourself. And you can still be really creative and collect many taste points with family and friends.

What is lemonade?

Lemonade is actually? Only? Water, carbon dioxide, sugar and fruit extract or aroma. In the original sense, the French word means a drink of lemon juice diluted with water. And lemon juice is always part of our recipes too? because a shot of acid has to be.

Then there is Bionade, Fassbrause & Co. These are malted lemonades that you can not make yourself at home, but brewed the right and similar to beer? becomes. Here, a certain malt mixture is mashed, that is heated at different temperature levels and then fermented with very specific yeast or bacterial strains. Since this fermentation is stopped in time, it also produces no alcohol.

In principle, homemade sodas are flavor syrup mixed with some lemon juice and carbonated mineral water. It is also possible to use suitable fruits, e.g. Blend the melon in the blender together with lemon or lime juice and sugar and then fill up with sparkling water. But if you always have one or more syrups in stock then you can get the summer into the glass even in the dead of winter. And always has a wonderful gift for invitations in the closet!

A syrup is produced by adding more or less hot glucose to the "taste". pours and lets draw. Purified sugar is a cooked sugar syrup made of water and sugar in a ratio of 1: 1. You can take less sugar, only too much could be problematic, otherwise the sugar can crystallize again on cooling. Just put sugar and water in a saucepan and cook for a few minutes. The sugar dissolves and remains dissolved even when cold. The high sugar content also ensures a degree of preservation. In most cases, citric acid is added, which completes the taste and preserves as well. Syrups, when bottled hot, keep closed for several months. But once you have opened the bottle, put it in the fridge! Cooled syrups should be cooled immediately and consumed within two weeks.

The following recipes are only suggestions. Your own creativity knows no bounds here. Since the ingredients are not overly expensive, can you be cheerful? sensibly only with small quantities - experiment.


Popular syrup recipes

1. mint syrup

Pour hot glucose over mint leaves, let stand for two hours and fill with a strainer into a bottle.

2. lemon syrup

Squeeze 5 biocitrons and finely grate the shells. Boil with 150g sugar and 150ml water for 5 minutes. Bottling hot.

3. Lavender lemon syrup

Express a bio lemon. Purify sugar from 250g sugar with the squeezed lemon. Pour over 3 tablespoons of dried lavender flowers, add lemon juice. After cooling, pour through a sieve into bottles.


4. Elderflower Syrup

Clean 10-15 flowered umbels (shake well and wash in stagnant water if necessary), slice 1-2 biocitons. Put 1 tablespoon of citric acid in a large saucepan or bowl. Make sugar from 1kg of sugar and pour warm over the flower mixture. Stir and leave covered for 4 days. From the strainer into the bottle. Tastes great with sparkling wine and is a basic ingredient for Hugo !!

5. ginger syrup

Purée the sugar with chopped ginger and lemongrass for 5 minutes. Filling hot.

6. ginger beer

Finely grate 150g fresh ginger and cook with 200g brown sugar and 1 liter of water for one minute. Add grated lime and orange peel and the juice of a lime hot in a jug and leave for 1-2 hours.

7. The peculiarity: Waldmeister syrup

Waldmeister contains coumarin, which can cause drowsiness and headaches in higher doses. Therefore, you should exercise caution on the subject of children and woodruff and you need only a few stems for half a liter of syrup. Woodruff is harvested in May / June, preferably just before flowering. Dry for a few hours (then it also starts to smell!) And then leave to soak in cold glucose for a few days.

Syrup in the glass, mineral water, finished? A straw, a lemon or lime slice may already be. A good idea: put a few berries or pieces of fruit in each compartment in the ice cube maker, douse with water and freeze. Or frozen berries directly into the glass.
