Make raspberry vinegar yourself

Raspberry vinegar is almost indispensable for lamb's lettuce, but also gives other dishes a great whistle. Bottled in pretty bottles, this is also a great "Christmas gift from the kitchen".
ingredients
- 500 g raspberries, fresh or frozen
- 1 L of neutral white wine vinegar
- Optional: small piece of ginger
- 2 tbsp brown sugar
preparation
- Fill raspberries and vinegar into a large, lockable glass. If you like rubbing a piece of ginger, that gives a fresh, but also sharper note. Then add sugar.
- Leave for 6-8 weeks. Strain through a clean cloth, preferably a cheesecloth, which is not washed with detergent, only with water. Sometimes I just take a kitchen roll. Express the raspberries well.
- Fill in very clean bottles, then the vinegar stays very long.
