Goose legs - as I tried them:

Ingredients for 4 persons:

  • 4 goose legs
  • 1 big Boskop apple
  • 1-2 onions
  • 1 clove of garlic
  • Spices (see below)
  • 2 cups of broth
  • 2 cups of wine - I took white wine, was just open, but I think Red is just as good.
  • 1-2 cups of orange juice

Preparation:

  1. Free goose legs of visible fat, that can be quite a lot. But careful, because the skin should be preserved as it is.
  2. Season strongly with salt, pepper, marjoram, thyme, basil (I have found a spice mixture at the market vendor that is ideal for this poultry).
  3. Preheat oven: 170 ° C top / bottom heat.
  4. Roast the meat on the fat side first, turn it over and fry until golden brown, remove it and put the finely chopped onions and the apple pieces in the fat. Smear on.
  5. Add orange juice, wine, stock and let it heat up. Put clubs on it. The skin should still look out the top, so fill up the rest with liquid. Put in the oven.
  6. After about 2.5 hours, test whether the meat is already good, stab it with a sharp knife once, and if it is easy, it should be good. I took out a club for safety and cut it.
  7. Then you can remove the lid and leave for about 1/4 hour, the skin can be crisp. Who likes and has, just turn on the grill function - I did not do it, they were so brown and with us anyway no one likes the skin.
  8. Then remove the legs, scoop out the onion and apple pieces and puree with the blender. If you want, add some more of the sauce. But this is of course very rich in fat.

There are probably so Fettabscheidekännchen or hot. But the "Mus" was enough for us.


To dumplings and red cabbage o. Ä. To taste.
