Manchego with quince jelly and apricots

A good ending to a good meal is always a dessert. According to a 19th-century monk, cheese is said to open your stomach before eating, but it is said that after a good meal, cheese should close your stomach ... how about some cheese? ... before or after the food.

ingredients

  • 160 g Manchego cheese
  • 90 g dried apricots
  • 90 g quince jelly
  • 40 g almond slivers

preparation

  1. Dice the apricots very finely.
  2. Heat the quince jelly in a water bath and stir in the apricot cubes.
  3. Allow the mixture to cool.
  4. Unbork the cheese and cut into slices of approx. 5 mm.
  5. Spread the slices with the fruit mixture and sprinkle with almonds.

Delicious after a good meal or as an amuse-bouche before dinner.
