  • 1 ripe Charentais melon
  • Juice from a lemon
  • 100 g of sugar
  • 150 g of Greek natural yoghurt
  • 1 pck of vanilla sugar
  • 2 tablespoons honey
  • 1 egg white

preparation

  1. First, the melon is cut in half and the core casing scraped with a spoon into a sieve and expresses it well. Please catch the juice.
  2. Then the melon halves are hollowed out to the shells. The empty trays are placed directly in the tray.
  3. The sugar is heated together with the lemon juice until the sugar has melted.
  4. Now the pulp is mashed with the collected juice and the sugar-lemon mixture in the blender. This mass is placed in the freezer for at least 2, better 3 hours. Every half hour of the cooling time, the mass must be vigorously stirred with a fork so that no crystals form.
  5. After this time, the finished sorbet mass is filled into the cooled melon halves and placed again for one hour in the TK.
  6. Now the honey is heated until it is liquid and stirred together with the yoghurt and vanilla sugar. The egg white has been beaten in the meantime to solid snow and is now stirred with a whisk under the yogurt.
  7. In the middle of the filled melon halves, press in one hollow and fill in the yoghurt mixture.
  8. Now the halves are frozen again for 2 hours and then the halves are quartered with a very sharp saw blade and can be eaten.
