Apple cinnamon ice cream with nuts for the ice cream maker

My girlfriend lent me her beloved ice machine, because I wanted to make ice cream myself, otherwise I would always have to resort to recipes without ice cream machine. This time I made a real yummy ice cream, an apple and cinnamon ice cream with roasted hazelnuts. Maybe a little late, because the ice cream tastes like Christmas.
ingredients
- 600 g apples
- 1 teaspoon of coconut oil
- 1 tbsp ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/2 tsp ground ginger
- 1/2 teaspoon ground star anise
- 1/2 teaspoon ground nutmeg
- 100 ml maple syrup
- 1/2 teaspoon salt
- 1 vanilla pod
- 300 ml of coconut milk
- 300 ml of cream
- 50 g whole hazelnuts
preparation
- The apples are peeled and diced and the vanilla pulp removed from the pod (the vanilla pods set aside).
- Melt the coconut oil in a medium saucepan and add the apples, including all spices, 2 tablespoons of maple syrup and vanilla pod, and simmer for about 10 minutes. Then let everything cool down.
- Now remove the vanilla pod from the pot and add the coconut milk, cream and the remainder of the maple syrup and finely puree with a hand blender.
- Fill the mass into the ice cream machine and let it freeze for about 30 - 40 minutes.
- In the meantime, preheat the oven to 150 degrees, cover the tin with a baking paper and spread the hazelnuts on it. They are roasted in the oven for about 20 minutes. Allow to cool afterwards
- Finely chop the hazelnuts and mix under the ice mass just before the end of the freezing time.
If you want, you can peel the hazelnuts after baking, but I did not do that.
