Mediterranean stir-fry - vegetarian

Today we had mediterranean fried vegetables. It does a little bit of work, because you individually fry all the vegetables, but still keeps the effort within limits.

ingredients

For 2-3 persons

  • 1 onion
  • 3-4 cloves of garlic (to taste)
  • 3 colorful pointed peppers (or others)
  • 1 medium sized zucchini
  • 3 smaller tomatoes
  • 1-2 handfuls of green beans
  • olive oil
  • Salt, pepper, thyme, rosemary
  • fresh basil

preparation

  1. Dice onions and garlic cloves.
  2. Sauté the onion cubes in olive oil until glassy, ​​then add the garlic and simmer for a short time, then set aside.
  3. Wash zucchini, tomatoes and peppers and cut into bite-sized pieces. Quiet a bit bigger, not too small.
  4. Knob the beans ?, halve the longer ones.
  5. Then in a pan, fry each vegetable variety, except the tomatoes, one at a time in olive oil. Let the beans sizzle a little longer so that they can be cooked. Then place each vegetable variety on a plate until all the vegetables are ready roasted.
  6. When this is done, put everything together in a pan, now the tomatoes, and let it simmer until the tomatoes have formed juice.
  7. Now season everything with salt, pepper, dried thyme and rosemary. Add freshly chopped basil. Other herbs, fresh or dried, are of course possible to taste.

We have a "leftovers meal"? made of it, because we still had cooked spaghetti from the day before, grated cheese, also bread, which had to be eaten and then there was scrambled eggs. Sounds weird, but each member of the family could put his food together as he / she liked it.

Spaghetti with Mediterranean stir-fry goes well together, but you can eat it well with fresh crispy baguette. Rice or boiled potatoes are also a good match.
