World's best Kaiserschmarrn

Ingredients (1 portion)

  • 100 g wheat flour
  • 1 g of salt
  • 35 g of sugar
  • 8 g vanillin sugar
  • 180 g of milk
  • 20 g of mineral water with carbon dioxide
  • 3 eggs
  • 20 g of butter
  • 15 g of powdered sugar
  • 20 g raisins (who does not like raisins, can omit them)

preparation

  1. Separate eggs, placing egg yolks in a mixing bowl and egg white in a mixing bowl
  2. Add sugar, vanillin sugar, salt, wheat flour, milk and mineral water in a mixing bowl to the egg yolk and mix with a hand whisk to a smooth dough
  3. Leave the dough half-open in a mixing bowl for 30 minutes to swell.
  4. After this 30 minutes butter in coated pan to melt over medium heat (medium heat maintained below)
  5. Beat the egg whites until stiff with egg whites and then add them to the dough and fold in the mixing bowl (THIS IS THE MOST IMPORTANT STEP FOR THE EMPEROR CHERRY)
  6. Put the half of the dough together with one half of the raisins in pan and bake light golden brown and firm on the underside for about 4 minutes.
  7. Quarter the dough in a pan with two spatulas, invert the quarter pieces and bake light golden brown and firm for about 3 minutes from the other side.
  8. Tear the dough into pieces and bake again for about 2 minutes from all sides until golden brown.

Put the ready-baked pieces of dough on a plate.

Repeat the last four steps with the remaining half of the dough and the remaining raisins and then dust the dough pieces on the plate with icing sugar. Finished!
