Onion, bacon and garlic - the Italian opening

... for many wonderful dishes!

For example for a "Pastatto"

When onions, chopped cloves of garlic and some smoked bacon are steamed in olive oil, raw noodles are added, roasted, doused with broth and infused, cooked open and finally topped with a little parmesan cheese.

That went too fast for you? You miss meat and vegetables?

Then you get a real recipe now:

1 onion, chopped
1 garlic clove, chopped
about 30 g of smoked bacon or bacon - that's for the taste

1 pepper - washed, cleaned, diced
1-2 tomatoes - washed, cut into small pieces with skin and seeds

about 80 g of lean pork per serving (schnitzel or minute steak, for example)

Per serving 80-100 g of durum wheat pasta - Spaghetti chopped very well.

Basil, oregano

In a pan, olive oil is heated, onion, bacon and garlic are added and sweated through. Then add the chopped meat and let it roast. Now the peppers are added and the tomatoes.

If all this is steamed, then the noodles are added. Swirl through and deglaze with a little broth. Salting and peppering.

Reduce the heat, without lid and cook slowly while stirring. Replace evaporated liquid over and over again - please do not drown. The dish stews - schmurgelt about half an hour ago.

When the noodles are gradually cooked, then the chopped herbs are added and at the very end, fresh Parmesan is grated over it. The cheese does not dominate, it just gives the finishing touch and binds the pastatto creamy.

Since the pasta is cooked with the other ingredients, they absorb the aromatics and taste completely different than the usual vegetable noodles, or as a side dish.

Of course, that's just one example. This recipe can be prepared in many ways.

With spinach and wild herbs, with mushrooms and broccoletti, with bean seeds. Ham or sausage can replace the meat.

Only courage! And enjoy your meal!
