Pepper radicchio salad with turkey strips, celery and egg

This salad is fresh and light, but still filling. Especially on warm summer days, it is well suited as a digestible dinner, which is not difficult in the stomach.

Ingredients (for one person)

  • 80g radicchio
  • 1 green pepper
  • 150 g turkey breast fillet
  • 80 g peeled, raw celeriac
  • 1 egg
  • 1/3 of a red onion
  • 1 tbsp pumpkin seeds
  • 2 teaspoons Chia
  • 1/2 teaspoon thyme, galangal, allspice and fenugreek
  • olive oil
  • White wine vinegar
  • salt and pepper

preparation

  1. Put the turkey breast, radicchio and paprika into strips that cut the onion into rings.
  2. Finely grate celery.
  3. Boil the egg for 10 minutes.
  4. In parallel, fry the turkey with chia, pumpkin seeds and spices in a pan for 10 minutes in oil.
  5. Peel egg and slice.
  6. Put the turkey strips with chia and pumpkin seeds, radicchio, paprika, celery, egg and onion into a salad bowl, pour 1 tbsp white wine vinegar and 1 tbsp olive oil over it and mix all ingredients thoroughly.
  7. Season with salt and pepper.
