Pickled mushrooms (mushrooms, oyster mushrooms) in spiced olive oil

These pickled mushrooms look very good in a pretty glass - so they are also suitable as a small gift!

1 pound of cleaned fresh mushrooms - small mushrooms, strips of oyster mushrooms or mixed both kinds are first boiled up in a mixture of lightly salted water with the juice of a lemon. The water should only barely cover the mushrooms.

About two minutes, then pour the mushrooms in a sieve.


In a second pot, boil the following mixture:

1 coffee cup of white vinegar
2 cloves of garlic
1 teaspoon dried thyme
2 spring onions cut into rings
1 bay leaf
1 tsp salt
1/2 tsp sugar
1 tsp of mustard seeds

Take the mixture from the griddle and mix 1 coffee cup of olive oil underneath. The drained mushrooms come into the marinade and have to pull in the fridge for 2 hours now. Before serving, sprinkle chopped parsley over it.

The mushrooms taste very good as an accompaniment to smoked trout or hard-boiled eggs and sandwiches.
