Rhubarb Foam for 8 servings (suitable for vegetarians and vegans)
ingredients
- 500 g rhubarb pieces
- 150 g of sugar (to taste only 100 g or even less)
- 100 g semolina
- 3? 4 L water (replace 1? 8 L with white wine)
- 1 teaspoon of lemon peel flavor or grated peel of 1 lemon
- a little cinnamon and vanilla
preparation
- Rhubarb in water with sugar and spices in a large enough pot (when whipped, the volume increases) bring to a boil.
- When the rhubarb breaks down, stir in the semolina and allow to swell. Allow to cool for about 2 hours!
- Beat until foamy. When the color changes, the foam is ready, but you should beat it for a while.
- Instead of rhubarb, you can also take apples or Johannis or Jostabeeren or even just juice. It tastes vanilla sauce or vanilla ice cream.
