Stuffed tomatoes for vegetarians

This is a dish if you also want to cook with friends. Of course, a good, dry wine should not be missing and cooking is even more fun. Mostly it is also a lot of drinks;)

Ingredients for 4 persons:

  • 6 meat tomatoes
  • 200 g of feta cheese
  • 4 sandwich toast slices
  • 2 eggs
  • 175 g brown rice
  • 100 g pine nuts
  • Oregano, thyme
  • 6 large leaves of basil (or frozen)
  • 1/2 bunch chives (or frozen)
  • 3 sprigs of rosemary
  • 1 large garlic clove
  • 1 can of lumpy tomatoes (500 g)
  • vegetable stock
  • Pepper, paprika powder
  • 2-3 tbsp olive oil
  • 125 g mozzarella - best buffalo mozzarella (tastes best)
  • 1 tbsp balsamic vinegar

preparation

The herbal mix:

Cut, chop and mix the herbs. Chop the rosemary separately to later sprinkle the tomatoes.

Slice the meat slices and pick up the flat lid, gently scoop out the tomatoes with a spoon and sprinkle with a teaspoon of herbal mixture. Also pick up the pulp with the liquid.


The filling:

Cook the rice.

Soak the 4 sandwiches in the collected tomato juice and then puree with the slightly chopped feta, the eggs, the brown rice, 60 g pine nuts, the remaining herb mix and the minced garlic clove.

Fill the hollowed tomatoes and place in a deep casserole dish.


The sauce:

Mix the chopped tomatoes, the chopped tomato remainders (lid and pulp), the olive oil, balsamic vinegar and the rest of the stuffing. Season with vegetable stock powder, pepper and paprika powder.

Add the sauce to the casserole dish. Sprinkle the stuffed tomatoes with rosemary and the remaining pine nuts.

Cook at 210 ° C in the preheated oven.


After about 30 minutes, cover each tomato with a thick slice of mozzarella and sprinkle with basil. Bake in the oven for another 15 minutes.
