Swabian sausage salad

ingredients

(For 3-4 people)

  • about 500 g of sausage, best Lyoner (there are also pre-cut in the supermarket)
  • 150 g black sausage,
  • Cut cheese (preferably Emmentaler) approx. 300g into Stückle
  • Piece gherkins
  • 1-2 chopped or as rings (also go red) onions
  • 2 tablespoons vinegar
  • some water
  • 1 tbsp rapeseed oil
  • some parsley
  • 1 tsp mustard
  • something Vegeta or Fondor o. Ä., acc. black pepper.

preparation

First the sauce is made:

  1. Water, vinegar, parsley, mustard, and Vegeta mix with each other. In the Swabian you prefer something sour, so should not be too timid with the vinegar!
  2. Put the sausage and the cheese in the bowl.
  3. Chop up the gherkins and onions or cut into strips or rings and fold in.
  4. Leave the sausage salad for about 30 minutes and pour over a little rapeseed oil just before serving.

The Swabian advises

  • Some like the onions better than rings and for decoration, but the onions taste better when they have pulled something in the sauce!
  • It is the same with the black sausage: they do not like others to swear by it!
