A great herb: Lakritztagetes - with salad recipe

A tip for the next spring and a subsequent recipe for those who have already planted this herb and have an appetite for a refreshing, fast autumn / winter salad.

Lakritztagetes is the subspecies of the marigold and has a strong licorice flavor. Calorie-free snacking along the way becomes an experience. The intense liquorice aroma is also versatile in the kitchen and is used as a seasoning herb in lettuce, tastes as vinegar, is suitable for desserts, tea, herbal wine and liqueur. For example, if you add a few stalks of Lakritztagetes with approx. 250g sugar candy to a bottle of vodka or grain, you will receive a kind of Pastis / Pernod / Dirty Harry after about 3 weeks storage in a warm place. The longer the liqueur stores, the more intense the taste becomes. The liqueur tastes pure, but also very good with desserts, pudding or waffles.


Even vinegar is easy to prepare: let a few stems in 1 liter of light vinegar, strain after about 3 weeks. Sounds unusual, but it's very interesting with lettuce, especially lamb's lettuce.

To dark meat and fish, the dillike herb is also an asset, but should not be cooked, as it loses cooked flavor. The cabbage is also a good alternative for dishes (salmon for example), which are often refined with Pernod / Pastis according to a specific recipe, and where it only depends on a slight licorice flavor. With the herb, the dish can also be prepared to a recipe, even if children eat.

From October small white edible flowers show up. If Lakritztagetes is harvested at this time, it is most aromatic.


The plant is annual, acts between roses, tulips or potatoes planted against roundworms.

Since Lakritztagetes grows and spreads well, it can be harvested time after time and does not necessarily have to be conserved. I spent some time in the kitchen hibernating and drying a lot more. Let's see what happens.
