I'm not a fan of food waste and also for organic waste is a lot of fruit and vegetables to shame, even if it makes sense to recycle to earth. Many of you will be pleased to hear how spicy, brown, and even black bananas can be made tasty.


The big advantage of overripe bananas is that they increase nourishing potency and therefore only very little conventional sugar needs to be used (honey in my case).

The striezel, or the milk bread, as one probably calls it in Germany, also keeps some days fresh. Must be due to the banana.

  • 300 g of plain flour
  • ½ pack Frischgerm / yeast (about 21g)
  • ½ tsp baking powder
  • salt
  • 1 tbsp honey
  • 4 tbsp oil
  • 150 g of milk
  • 1 very ripe banana
  • If you like, you can also add raisins

I have no vanilla sugar because the taste of the banana in this dough somehow reminds me of vanilla (and my husband tasted it much better).

Making the dough in less than 10 minutes:

  1. Sift the dry ingredients.
  2. Crush the banana with a fork in a soup plate until no more chunks are visible. Then with all the ingredients with the mixer (with the dough hooks) for about 5 minutes, a smooth dough process.
  3. Lay out a baking sheet with parchment paper and form an elongated loaf from the dough and place it in the center. I have coated the dough with nothing. But if you really want to, for example. As with milk, then the surface is darker.
  4. I then set the oven to 30 degrees and let the dough go there for about 30 minutes (circulating air).
  5. Then rise to 180 degrees and baked about 20 minutes fertig.Ich then put the baking sheet on an inverted grid from the oven and cover the pastry with a clean dishcloth. So I let everything cool down and at the same time is protected from my cats.
  6. This striez is done in about 60 minutes including baking.

For this recipe you can also freeze the already crushed banana and use it for baking later.
